3 large zucchini
1 pound organic grass fed ground beef
1 Tbsp avocado oil
¼ cup onion, chopped
2 cloves garlic, minced
1 jar Walden Farms tomato and marinara sauce
½ tsp Herbamare or Himalayan sea salt
¼ tsp cayenne pepper
1 tsp Italian seasoning
1 tsp Bragg’s nutritional yeast flakes
½ cup Trader Joe’s shredded 3 cheese blend
Preheat oven to 350 degrees Fahrenheit. Slice zucchini in half and remove zucchini pulp with a spoon until only the outer shell is left. Slice and set the zucchini pulp aside. Put zucchini shell on lightly greased pan and set aside.
Heat avocado oil and sauté onion and garlic for 3 – 4 minutes. Remove onion and garlic. Add ground beef and cook until it is brown in color. Add the tomato sauce, zucchini pulp, onion, garlic, seasonings and cook for 10 minutes. Add the cooked mixture into each of the zucchini boat shells and sprinkle cheese on top and bake for 10 minutes. The remaining meat sauce can be kept and used with Miracle Noodle shirataki spinach spaghetti noodles for another meal.
