1 Tbsp. olive oil
¼ cup finely diced onion
¼ cup finely diced celery
2 Tbsp. walnut pieces
1 package of Soyanic smoked tofu, diced
1/3 cup Walden Farms thick and smoky barbecue sauce
Salt and pepper to taste
Earthbound Farm organic butter lettuce leaves
Add olive oil to sauce pan and heat. Add onion and stir periodically for 4 minutes. Add celery and continue to stir for 3 minutes. Add walnut pieces, tofu, barbecue sauce, salt and pepper to taste. Simmer for 3 minutes. Remove from heat and add to lettuce leaves.
Note: Diced chicken breast can be substituted for tofu. Low carb or sugar-free barbecue sauce can also be used in place of Walden Farms barbecue sauce.
